Sweet apple chutney
Speyside, Lossie
The nose opened with an intense sweetness that combined jelly sweets with apple crumble sprinkled with Demerara sugar. Fruit driven notes continued with aged cider and spiced apple chutney that incorporated elements of lemon oil. A puff of white pepper tickled the senses as chilli oil awakened the tongue to greater sweetness, ginger and baked banana. Adding water released a rather more sophisticated realm of jasmine green tea and herbs d'Provence. Soft pears and pineapple danced with dried apple chunks whilst the spiciness of rye bread arrived with a serving of thick cut marmalade. On the finish we found candied ginger and the long lasting texture of hazelnut oil.
