It’s time to take a bourbon dive! Distillery Dive #B7: Mash Bill Madness! explores the nuances of three extraordinary bourbons juxtaposed according to their grain compositions. These recipes, or mash bills, greatly impact what combination of aromas and flavors will come through in your glass.

Our US-exclusive cask-strength single casks were all distilled in Lawrenceburg, Indiana at distillery B7, and aged in new American oak #4 charred barrel with #2 charred heads (barrel top and bottom). Three unique mash bills (grain recipes) have created equally bold, yet incredibly nuanced expressions American whiskey lovers will delight in discovering. Cask No. B7.4 Myriad colours used a mash bill 75% corn, 21% rye and 4% malted barley. With the corn driving sweetness, rye adding spice and malted barley structure, this ‘high-rye’ bourbon boasts big toffee, red fruit and cinnamon spice notes. Cask No. B7.7 Convivial companion dials up the rye component to 36% rye with 60% corn and 4% malted barley. This (super!) ‘high-rye’ bourbon takes baking spices and turns them into chili pepper spice that packs a wonderful intensity. There’s plenty of honey and vanilla sweetness from the corn and the texture carries all of these flavours along effortlessly from start to finish. Cask No. B7.13 C’est si bon! rounds out our trifecta of taste adventures with a marvelous departure from the rye grain. We are in ‘wheated’ bourbon country with a mash bill of 51% corn, 45% wheat and 4% malted barley. Sweetness abounds from two grains (corn and wheat) offering an expressive whiskey bursting with syrupy fruits, chocolate fudge, demerara sugar and a touch of citrus. Decadent and divine!
