We cut a slice of a fruit of the forest cheesecake before baking spices, dried citrus peel and even a trace of hops made an appearance. A spicy heat on the palate yet with a balancing smooth and oily mouthfeel like a creamy polenta with spicy chilli oil. Water added a resinous scent of a fir tree next to waxy honey notes while to taste a pavlova with a spicy gooseberry elderflower fool and a dry red Tempranillo wine with hints of coconut, vanilla and black pepper. The mash bill for this bourbon consists of 60% corn, 36% rye and 4% malted barley, matured in a #4 char new oak barrel with #2 char heads.
