A sweet aroma of butterscotch, caramel and candied pistachios greeted the Panel before notes of dried papaya, mango and spices complemented this fascinating encounter. On the palate neat the sweet spiciness of cinnamon raisin (soaked in rum) swirls and honey sweetened chocolate tickled the taste buds. Water added a fruity sweet dimension on the nose of raspberry mille-feuille and apple cinnamon ice cream while the taste creamy, smooth and sweet like a mascarpone cheesecake with a lightly toasted almond crust served with a chocolate-hazelnut sauce. The mash bill for this bourbon consists of 75% corn, 21% rye and 4% malted barley, matured in a #4 char new oak barrel with #2 char heads.
