Slivovitz, rumtopf and Black Forest gateau

On the nose, we found sweetness (fudge, tablet, choux pastry with crème anglaise) and fruit (Slivovitz, raspberry and strawberry fruit leathers), sandalwood oil, dried flowers and tarte tatin. The neat taste delivered a crisp, penetrating mixture of oak and fruit - fruit punch, rumtopf, stewed apple, dried cranberries, pomegranate and Black Forest gateau. The reduced nose got rosehip jam, raspberry Ruffle bars, cola cubes and toffee apples. The palate - warm pastries, rhubarb rock and barley sugars, with dark chocolate, tannic oak and spices tingling the finish. After nine years in ex-bourbon wood we transferred this into a first-fill barrique.
