The nose – bacon crisps with melted queso dip over a fire in an oil drum, a delightful feast of cheesy ash and porcine smoke; briny with hints of olives and smoked paprika. The palate overwhelmed us with hickory smoked hotdogs, salty wood, Twiglets, hessian sacks, squid ink pasta and perfumed peat reek. The reduced nose evoked mountain bothies – wound straw firelighters and waterproofs and leather boots drying by the fire. The palate reminded us of campfire ash blown onto pizza crusts and spiced apple crumble with vanilla custard; the aftertaste contained salted chillies, tobacco leaf, wintergreen and sweet smoke.
