A rising fug of ancient wine cellars, then sweet raisins, aged Petit Champagne cognac, caramelised brown sugar, date molasses, sweetened marmite, figs and dates in abundance. A stupendous nose with loganberry jelly, tangerines, rowanberry compote, dark chocolate sauce and mint extract. Dilution reveals old leather, game meats, aged pinot noir with an animalistic funk, gooseberry compote, old herbal extracts, yellow chartreuse, spiced wax and banana bread. The palate opens on more chocolate sauce - the gooey kind! Then wild mushrooms, Boal Madeira, sweet espresso, rhubarb crumble, cranberry gravy, pecan pie and mincemeat. With water it concentrates even further towards jasmine tea, Bovril, meat stocks, BBQ char, red fruit and herbal infusions, toasted plain pistachios, black truffle, hardwood shavings and aged plum wine with five spice. Matured for 21 years in a bourbon hogshead before being transferred to a first-fill Madeira hogshead.
