Thyme well spent

We released the marmalade-tinged tincture from the bottle with the reverence it duly deserved and waited with great expectation. A rather shy introduction greeted us with ripe mandarin and baked bananas. Slowly, slowly, the aromas unfolded like an archaeologist brushing dust from an ancient relic. Stratified layers of melted butter and pecans sat above overripe dessert apple and leather polish. The hands of the clock continued to turn as our patience was rewarded with the appearance of sage and thyme that seamlessly merged into eucalyptus, nutmeg and cloves. Everything began to swirl in perfect harmony as a soft and viscous palate coated the mouth with oily orange skin. A vibrant tang from fresh pineapple and thick cut marmalade brought with it a vitality that aligned with pink pickled ginger on a finish of old oak and physallis. After spending 27 years in an ex-oloroso butt this was transferred to a 1st fill PX butt for the remainder of its maturation.
