Old fashioned Highland hospitality

A fascinating robust and characterful aroma of balsamic vinegar on fresh strawberries, dried figs and dates, hoisin sauce and beef olives with a crunchy pine nut and semi-fired tomato stuffing. On the palate we experienced true old school Highland hospitality - rough and ragged edges of honest simplicity but warm and welcoming. After the addition of water brown sugar, cinnamon and orange zest came to the fore with notes of Calvados, Jägermeister and young Armagnac soon following. Sweet and savoury to taste with a silky texture like in cinnamon porridge with caramelised oranges. After five years in an ex-bourbon hogshead, we transferred this whisky into a 2nd fill Oloroso hogshead.
