A burst of bold fruit paired quince and pears with fragrant notes of cherry blossom and elderflower as lemon sponge cake merged with nutmeg, cinnamon and ground coffee. Then beeswax textures complimented balsa wood and sweet biscuits before mango mixed with vanilla, fruit jelly sweets and custard. After a dash of water, a fresh burst of mint washed over golden sultanas and coconut, however, richer characters now embraced black forest gateau, fig rolls and hot buttered toast. Chocolate notes continued alongside orange and bergamot to create superb dessert-like compositions with hints of creme brûlée, strawberry coulis and whipped cream. A fine fragrance continued into scented pears, chamomile tea and pencil shavings as we ventured into a finish of honey and tingly spice.
