Unusual exotic aromas of a Caribbean bread and butter pudding, banana toffee muffin, and a boozy chai latte brought a warm and happy feeling to our hearts. On the palate, the warmth certainly increased with that traditional Caribbean black cake where the fruits are soaked in rum and cherry wine for months. With a drop of water, we started dreaming as we sat around a beach bonfire listening to the song ‘Blue Hawaiian Moonlight’ accompanied by the peaceful sound of a ukulele and all we can add was “Hang Loose”. After 14 years in an ex-bourbon barrel we transferred this whisky into refill barrel which had previously matured rum from Jamaica.
