Imagine a pancake stack with crisp bacon, blueberries and maple syrup, bacon flavoured snacks and fresh spring onions, leek and sweet minty chives. There is a lot of smoke on the palate, much more than expected from the nose, smouldering embers, a damp garden bonfire next to crispy salt-and-pepper chicken skin chips. After reduction, an initial medicinal whiff that was soon followed by the sweet chalkiness of cocoa powder dusting. To taste, impressive in its austere simplicity, like one would find in a chilled glass of Pouilly-Fumé. Brisk, concentrated, floral as well as a sweet, flinty smokiness with a distinct herbal mineral note in the finish.
