Tasting Panel Notes
The neat nose brimmed with pine wood, herbal teas, exotic hardwood resins, tea tree oil and chen pi orange peels. Behind that, we noted a richness of camphor and some sweet digestive biscuits. Water brought a more mentholated quality, with lovely waxiness, herbal liqueur hints and impressions of aged honey-whisky liqueur. The palate displayed orange bitters, camphor and fir resins along the waxy and textural lines the nose had suggested. We also found treacle, game meats, natural tar and aged bas-armagnac. Water made everything superbly waxy and honeyed. A very rich profile emerged, with lovely detailing of spices, camphor, wood resins, aged teas and treacle cake. This was matured in an ex-bourbon hogshead for 15 years before being transferred to a first fill #4 char hogshead.
