Herbs on a grill tray
Highland, Eastern
A subtle waft of sea air introduced capers and fennel before more herbal tones delivered rosemary and sage on burnt vegetables and parsnips roasted in olive oil. The grill tray also brought with it smoked ham and chicken gravy with chestnuts roasted over applewood smoke. The woodiness expanded into pine sap and old school desks with a sweet smell reminiscent of fragrant pipe tobacco. Burnt brown toast conveyed a more charcoaled feel as nuts returned on the palate to be joined by crushed barley and a sweet lift from burnt toffee. A wonderfully oily texture encased the entire experience like full fat cream that lasted long into the herbal liqueur finish.
