Smoke, soot and tarry ropes

This nose seemed rather masculine – not sweet, but plenty of smoke, chimney soot, charred wood, tarry ropes, coal cellars and creosoted fence posts – some Bovril, limestone and chalk. Sweetness appeared on the palate – but it struggled among the savoury smoke and spice (Fisherman’s Friends, toffees rolled in ash, jamon Serrano, jerky, salt and vinegar crisps). The reduced nose had church candles and matches, kiln timbers, boat sheds and peat smoke drifting over an island ferry. It came together on the reduced palate – sweet and salty, tar, smoke and ash (toffee apples, custard and liquorice; charred fish skin and teriyaki mackerel).
