Cask No. 63.74

Straightforward shooting weekend

Speyside, Spey

A wonderful aroma greeted the Panel: poached pears, Battenburg cake, buttered scones, stewed rhubarb, custard, strawberry jam, frangipani, rum-soaked raisins, clotted cream and bramble juices spilled on a dunnage floor. Luscious we thought. With water there were caramelised peaches, flower honey, lychees and ripe pears poached in calvados. Some rhododendron flowers in the background. The palate exploded with figs in armagnac, cloudy apple juice, vanilla cream, pear cordial, apple turnover and some chalky green woodiness. With water it became almost hyper juicy. Mango, marzipan, more pears, more apples, strawberry cream, camphor, fruity waxes, grape juice, tinned peach syrup and exotic fruit cordials. Magnifique!
