Fruit jellies melting on a sun-battered car bonnet. Some freshly mown lawns, butter bean hummus, shortbread, very young Calvados, myrtle tea and fresh fabrics. Also, a smattering of yellow flowers and pollen. Reduction brings out brown sugar on red apple slices, plain dried cereals, cornflakes dusted with icing sugar, snapped green twigs, tarragon and mint cordial with wormwood. To taste, it’s initially citric with lots of runny honey, toasted sunflower seeds, cocktail sugar syrups, quinine, elderflower cordial and coconut water. Dilution offers pithy citrus peels, pineapple jellybeans, fruit salad juices, green tea, dry farmhouse cider and freshly made ginger beer. Lovely sunny afternoon whisky.
