Tasting Panel Notes

Say cheese! (in the style of a popular British claymation man-and-dog duo, whose favourite is Wensleydale). One Panel member, a big grin on his face, added that here the cheese was blended with dried apricots and served on a sea-salted cracker. Creamy and crumbly, with a slight fruity sweetness and that hint of salt, this delivered a fascinating interplay between sweet and savoury flavours. After reduction, on the nose we were served a pickleback, a shot of whisky followed by a shot of pickle juice. To taste, we had a slice of frozen orange seasoned with lime juice and tajin.
