Cask No. 35.343
Dramming at the Day Spa
$110
60-hour fermentation encourages the fruity and floral esters that underpin the characteristically light, smooth spirit you find here. That spirit carries generous vanilla and citrus sweetness, with orchard fruit and soft malt leading into richer confectionery notes. Water reveals a softer, creamier side before cherry, hazelnut, tropical fruit and a touch of mint add complexity. A deceptively easy-going dram that builds from classic Speyside elegance into a wonderfully indulgent finish.

Tasting Panel Notes
Initially we noted lemon meringue pie topped with vanilla custard. The big and generously sweet nose also suggested hawthorn, lime jelly, apple juice and freshly crushed malt – easy, straightforward and highly appealing. Reduction brought apple turnover, brown caster sugar, melted butter run through with orange zest and subtle notes of mint tea and vanilla shortbread. The neat palate opened with cherry cough sweets, candied hazelnuts, sweetened olive oil and dried banana chips; robust and mouth-coating. Water brought out softer tones of crème anglaise, fruit salad chews, granola, papaya and starched linens.
