Spicy berries and sour cherries
Speyside, Lossie
Familiar aromas of toffee, caramel and maple syrup emerged alongside dry earthy notes to form a herbal cough syrup. Cranberries and dried sour cherries brought a juicy vivaciousness that created an interesting amalgamation with papaya, pineapple and a squeeze of lime juice. Then heavier notes appeared of coffee and spicy ginger that became complimented by hazelnut ice cream. Fruit notes remained dominant after water was added but now swayed towards singed apple tarts, rosé champagne and dried apple rings with cinnamon. A touch of apricots and cumquat appeared before the spice of rye bread led into mulled wine spices followed by light cigar smoke and marzipan on the finish. After spending 24 years in an ex-bourbon hogshead this was transferred to a 1st fill port barrique for the remainder of its maturation.
