Campfire marshmallows on singed sticks
Islay
A stunning mixture of heady citrus and fragrant smoke get the juices flowing. In time, dried banana chips and toasted coconut strips start to emerge from the smoky backdrop. There’s a saline quality with a touch of iron, like the finest fresh tuna in a nori roll. The texture is silky smooth and the quality of the bourbon cask is evident, the sweet char harmonising perfectly with the oily and smoky flavours. The smoke is more fragrant wood than medicinal. Water brings freshly cut grass right outside the distillery, the citrus is slightly heavier and is more orange than lemon. There’s a pleasing polish note, like brasso on an old cloth. To taste it is remarkably smooth for the age and strength. The finish is like campfire marshmallows on singed sticks.
