After spending 26 years in an ex-bourbon hogshead before being transferred to a 1st fill Pedro Ximenez hogshead for the remainder of its maturation, we concluded that words cannot do justice to this monument of flavour. The intense Bengal Tiger orange colour introduced us to a nose of supreme sophistication. At first, soft and fragrant notes like incense and fields of lavender in Provence. There was a lifted wine note like Hungarian Tokaji or fine Armagnac that lead to richer realms of dried orange peel, mocha and cinnamon spice. Dark fruits soaked in port followed with chocolate-covered brazil nuts and banoffee pie. The heavenly reek of smoked bacon mingled with coffee ice cream, butterscotch and lemon thyme on the finish.
