The nose found a raft of elegant sweetness (sugary pastries, vanilla, caramelised pear) tossed in the thundering surf of seaweed, iodine, salt air and peat smoke. With water it turned into a picture of a Danish fisherman, chewing liquorice and drinking tea - cigarette ash, singed hay and tarry ropes on a wooden deck – we loved it. The palate also had smoke, ash and salt – plus sweet mussels and scallops simply cooked on a beach barbeque. In reduction, the palate seemed sweeter –but with a dry mouth-feel as the smoke thinned, allowing the wood spices, salt, pepper and mint to develop.
