Cask No. 28.35

A song of Spring and Summer

Highland, Southern

We found the nose bright, clean and delicate – its youthful freshness sang of Spring and Summer, of cut meadows and dewy grass, of pear-drops, geraniums, new cedar and sparkling perry. The unreduced palate gave malted barley and jam tart sweetness, then sharper notes appeared (grass, spiced pear, grapefruit, gooseberry, bitter lemon), with dry chilli heat swelling in the finish. In reduction, the nose was uncomplicated but very pleasant, evoking dusty lemon groves, pine needles, Schorle spritzer and freshly-laundered linen. The palate – limoncello, citrus boiled sweets and lightly mouth-numbing spice – one to sip before heading off to work in the frosty fields.
