The nose bristles with dundery rum funk. Lots of red onion chutney, all-spice, aged balsamic and many dark fruits such sultanas, dates, prunes and plums all soaked in old Cognac. Some dark chocolate and mint-infused incense smoulder in the background. A slither of water down the side of the glass delivers striking viscimetric whorls. And on the nose: bay leaves, muscovado sugar caramelising, melon balls, hints of natural tar and bunches of fresh exotic herbs. In the mouth there’s a big slug of cranberry sauce gravy. Butterscotch, tamarind chutney, bamboo shoots, clove oil, mustard seeds popping in a pan and peppered beef jerky. Further notes of ink, lime oil and marzipan. Water lends the palate more sweetness. There’s rosewater, sweet ‘n’ sour sauce, plum wine, caraway liqueur and wild strawberry compote.
