Tasting Panel Notes

From the outset, the Panel agreed on mint ice cream, lime cordial, olive oil and wisps of light smoke. The aromas developed into a furniture restoration workshop filled with linseed oil, furniture polish, dry wood and a trace of chlorine. On the palate, the mint re-emerged confidently, to be joined by salted lemons, green olives, clamato juice, seaweed and cold pork crackling. Water brought greater clarity to the smoke, while adding fresh impressions of tomato vines, oyster juice, freshly cut grass and a rustic countryside bar. As it unfolded the savoury notes deepened, balanced by a gentle coastal salinity. The finish delivered grilled shrimp straight from the barbecue, a hint of soot from an old ash pan and a delicate dusting of powdered sugar.
