The sharpness of sour Belgian gueuze beer at first. Then this morphs into heather ales, meadow flowers, cut grass, beach pebbles, sorrel, freshly milled oats and pollen-laden white lilies. A scatter of banana chips in muesli, dusty malt and vanilla foam. With water there's chestnuts, white balsamic, linseed oil, chopped parsley and chives in a tart vinaigrette and lemon balm. A hint of zingy gooseberry and some ripe star fruit. The palate opens on golden syrup with a kick of green chilli. Then sandalwood, newspaper ink, fresh printer paper, lemon tea, chalk, hibiscus, light medicines and tried tarragon flakes. Water brings out salted toffee, hand lotion, paprika-spiced flatbreads dusted in turmeric, ointment and buttered cereals. The finish suggests beach sand, clover and olive oil. Complex and demanding stuff!
