A syrupy start layered burnt toffee, fudge and dark chocolate over candied oranges and lemons while a gentle smoke lingered beside streaky bacon on pancakes. Oily elements suggested toasted pine nuts and Brazil nuts that morphed into black olives on the palate. Smoke began to bellow as marshmallows scorched over flames and fragrant applewood smoke shrouded toffee apples and caramel wafers in vanilla ice cream. A small amount of water unveiled candy shop notes and maritime memories of sea salt-covered almonds and the thick oil of a fishing trawler's engine room. A slightly drier palate now exuded herbal smoke with sausages and smoked mussels while still retaining a burnt molasses richness that combined with amontillado sherry on the finish.
