We sat back and became enveloped in a tide of comforting caramel sauce and smoked almonds. Waves of thick cut marmalade crashed into salted liquorice with the weight of a fully loaded galleon. A distinctly oily and nutty temperament led us towards palo cortado sherry, with its complex layers of rich flavour. The palate had us falling into realms of dried fruits, however our landing was cushioned by pillows of figs and prunes encased in a pleated sheet of crystalised orange. A refreshing tang of ginger marmalade intertwined with eucalyptus leaves before the appearance of more maritime notes, as ship's rope combined with the coal cellar of a steam ship. A hint of sweet oysters followed and beckoned a spicy finish, characterised by nutmeg and cinnamon with a lasting nutty refrain. After spending 7 years in a refill bourbon hogshead this was transferred to a first fill oloroso hogshead for the remainder of its maturation.
