A sweet start of toffee apples and vanilla swirled with virgin olive oil before greener notes of geraniums and nettles bobbed to the surface. Next, distinctive aromas of burnt driftwood combined fresh pine with heavily smoked fish. Flavours danced between oily fish at the beach and sweet sticky syrups of fig and maple, as buttery textures introduced brioche bread with cinnamon, cloves and wasabi sauce. A little water stirred up images of fishing trawlers and maritime markets selling buckets of cockles, muscles and oysters. Crab meat and lobsters gave a sweet character that once again introduced vanilla and fudge but now with ice cream in wafer cones and wafts of applewood smoke, ash and charcoal.
