An initial aroma of dusty pineapple and cherry pits, some dried mango slices, fermenting melon and warm marshmallow. Beyond that we found lime and caramelised brown sugar, a wee nibble of white pepper, some fresh oak and freshly printed glossy magazines. With water the nose offered lemon pith, custard, vanilla cream, coconut water and honeysuckle. A fresher shade of mango, Caribbean fruit punch and cut red apple. The neat palate was initially herbal and full of chives and flat leaf parsley. Putty, playdough, chilli jam and pears. Some waxed lemons, camphor, spearmint and juicy fruit chewing gum. With reduction we found it to be sweeter and creamier. Vanilla pods, icing sugar, crystallised ginger, coconut husk and citrus yogurts.
