Pleasantly pleasing, simply sublime

We were served a Manzanilla Sherry with that distinct saline aroma accompanied by thinly sliced, straight from the cured leg of pork - Iberico jamon. A chewy delight with that umami flavour best described as pleasantly sweet and savoury, or simply sublime! Following reduction, we prepared a game terrine with spiced apricot and orange chutney as well as a slowly simmered lamb tagine while on the palate it was more like a creamy chicken afritada with pineapple and as dessert gulab jamun. Following twelve years in an ex-bourbon hogshead, we transferred this whisky into a 1st fill Spanish oak Oloroso hogshead.
