Mediterranean moleskin

Immediate notes of ripe peaches, nectarines, dried mango chunks, banana chips, praline, tasted hazelnuts, beef stock, golden syrup and sweet red liquorice. Some green walnut wine laced with cherry cough syrup. Lighter notes of honeysuckle, stewed figs and chocolate rice pudding mingle underneath. With water there's brown sugar, sweet navy rums, crushed Brazil nuts, damp malt loaf and medium dry aged cream sherry. The palate is full of wood resins, mulling spiced, bitter chocolate, black tea, minty tannins, quince pastry, strawberry jam, coriander marmalade, Australian port wine and salted toffee apple. With reduction we find a more expressive tropical fruit side, notes of pineapple, coconut milk, sweet balsamic, camphor, raspberry cordial and melon sorbet.
