There is no mistaking this one. Lashings of raw antiseptic and engine grease whipped into a pasty flurry with bonfire ashes and TCP. Add a bucket of green olives and you've got some mad tapenade. There's also bandaged whelks plummeting to their demise on the hot coals of a BBQ. Pure brilliant blue peat smoke brings a lump to the eye and tear to the throat. With water it's all petrol-doused sandalwood, cherry eau de vie, gorse and soy sauce. Taste it and you're chewing a bunch of smouldering heather. There's lemony peat and peaty lemons. Pink grapefruit sharpness, ash-rolled goat cheese, dried mint leaf, pin-sharp herbal ointments and smoky wax. Reduction brings out a few litres of hot tar, salty pasta water, cullen skink broth and buckets of Germoline. A tang of tropical fruits elbow their way into the finish.
