A bracing and classic peaty youngster. Opening on smoked Bavarian cheese and german Rauchbier, it quickly develops notes of baked apples with cinnamon, dried seaweed, pure germoline and hospital corridors. A little time reveals further notes of fishing nets, tarred rope, ashy minerals and a blade-like purity. Water gives up a little dry aged beef, pink peppercorns and butter. The delivery in the mouth is bold and punchy. A swish of strong mezcal, seawater and coal smoke. Also peated mead, mixed olives and barbecued whelks. With a dash of water there is smoky bacon, malted bread, cider vinegar and wintergreen oil.
