Onboard the galleon we made space to sit between cardboard boxes packed with jars of olive oil, quince jelly and gooseberry jam. The distinctive character of soft leather merged with exotic coffee and ripe oranges from warm climates. A dash of water presented us with tots of spiced rum, resplendent in molasses, liquorice, cinnamon and nutmeg. Darker notes of prunes and figs joined banana skins and sticky buns whilst the finish set sail towards forbidden lands of cloves, dark chocolate and cola cubes. After spending 14 years in an ex-bourbon hogshead this was transferred into a 1st fill oloroso hogshead for the remainder of its maturation.
