The nose set about on an unpretentious adventure that unified dried mushrooms and parsnips with unripe bananas, apples and pears. Barley was fresh from the field with elements of gorse bushes and clean soil. The first sip uncovered a true masterpiece however; a bold and spicy amalgamation of ginger, cinnamon and chestnuts. Truffle oil and walnuts coated with viscous textures whilst apples and gooseberries balanced with a racy zing. Changing again with water, we found whiffs of sea air, oyster shells and sand dune grasses blowing in the breeze. Puffs of smoke from a tug boat joined coconut and marshmallows whilst the finish was complex with sea buckthorn, rock pools and margarita cocktails.
