A very gentle wisp of smoke came from cherries soaked in peaty whisky, vanilla-infused bourbon whiskey and honey – manna from heaven! On the palate dark treacle and pickled ginger were followed by a mouth-watering oily sweetness and an episcopal violet fragrant smoke. Diluted we sailed into Scapa Flow and prepared potted shrimps cooked on-board in seawater then tossed in butter and seasoned with spices as we opened a bottle of heather ale – malty with herbal spice and a floral peaty finish. At eight years of age, we combined selected hogsheads from the same distillery into a variety of different casks to marry. This is one of those casks.
