The unreduced palate has layers of complexity – lemon bonbons, stewed apples in the pan – lemon zest and sorrel bitterness – plasticine and Play-doh waxiness – coconut and tobacco depth and pleasant eucalyptus after-tingles. The reduced nose is uplifting and poignant, like zephyrs shimmering the leaves of a lemon grove; sharp as the pain of love. The reduced palate synthesises everything – bitter-sweet, mouth-tingling lemon drops of pleasure.
