Sticky ribs cooked by lightning
Islay
A conspicuously candied commencement delighted us with barrow loads of heavily charred marshmallows, pink candy floss and burnt toffee with roasted sweet chestnuts dipped in sea salt. Heather and gorse combined to inspire a seaside hillwalking scene with chalky cliffs, dried seaweed and a mostly empty bag of smoked almonds. Returning home to barbequed pork ribs lavishly coated in the stickiest of sticky sauces was a true delight, especially with a sprinkling of cinnamon and star anise. The inclusion of water created a deluge of seashore complexity. Remaining fantastically sweet it now embodied the supercharged cinders of electric ash after the sudden decimation of a honeysuckle tree by a bolt of lightning.
