A Smoky Scottish Twist!

This distillery on the southern end of Skye opened in 2016 and released its first malt in 2021. The spirit is well peated (55-60ppm) with a lovely coastal character from start to finish. In addition to a highly peated regiment of barley, their spirit cuts go farther into the tails than most, garnering more of those oily characteristics we love in a peated island malt. This one is a showstopper, reminding our Tasting Panel of smoky bacon-wrapped asparagus.

Tasting Panel Notes
The neat nose made us all feel very hungry as we imagined a plate of smoked bacon-wrapped green asparagus with labneh, brown butter and burnt lemon. On the palate we were reminded of a common Levantine drink, as we enjoyed a smoked sage-infused black tea – yes, the smoke is an added Scottish twist! Following reduction, the scent of smoked mango with lime and coconut appeared next to cracked black pepper and chipotle chocolate chilli. The taste brought us almost full circle as we enjoyed a creamy guanciale, bacon and green asparagus omelette garnished with chives and coriander, served with a slice of fresh lemon.
