Coconut oil and polished oak beckoned us towards rosemary, basil and thyme while butterscotch and strawberries combined with nutmeg and allspice. On the palate flavours exploded with toffee, fudge and tropical fruits wrapped in herb infused olive oil, marzipan and dark chocolate. With water the aromas opened greatly, now abound with caramel, nuts and leather in a cigar box alongside maple syrup and vanilla pods. Linseed oil and waxy lime skin pointed towards clean engine oil and pink peppercorns in clotted cream. Textures coated the mouth and permeated through juicy tropical fruits, blackcurrants and peaches. A herbal character now developed and joined hot cross buns and pine needles on the nutty finish. After spending three years in a 1st fill ex-bourbon barrel this was transferred to a 1st fill ex-rye barrel.
