We got whitebait with cumin salt and smoky mayonnaise followed by a hint of sweet bourbon vanilla and honey oat breakfast bars. The taste was best described as ‘weird but wonderful’ – peaty, salty, creamy porridge but with a dry finish. With water the nose turned sweeter and fruitier – did someone add some spiced peach and apricot to the porridge? And somehow, at the same time, it’s like a freshly lit miner’s oil lamp with peat incense. On the palate now like a cold smoked tuna Niçoise salad with roasted vegetables in sweet floral oil and vinegar dressing – life begins at the end of your comfort zone.
