Yummy stuff!

Speyside, Spey

After nine years in ex-bourbon wood we transferred this into a second-fill PX hogshead. The nose starts with sugared churros and chocolate-coated hazelnuts, then stewed fruits and sherry macerated plums; finally savoury notes of bacon, chorizo and fennel sausage. The palate has a dominant note of cinnamon (in pastries mixed with orange zest, honey and raisins), plus pork crackling; the finish contains cardamom, chai tea and black Dutch rolling tobacco. The reduced nose keeps on giving – chocolate raisins, candied almonds and treacle tart, fruit cake, orange, vanilla and spices – yummy stuff! The palate now has Madeira molasses cake, figs, chocolate fondant, old cognac and cigar humidors.
