Very biscuity to begin. Some yeasty and slightly autolytic touches as well; a top notch blanc du blanc Champagne. Then it veers off in a more farmy direction with sheep wool, hay, mineral oils, tool sheds, stables, lemon balm and cough syrups. A little water heightens these sooty and syrupy notes and adds into the mix herbal extracts, salty liquorice and even hints of brine. There’s hot grist, kiln air and mustard powder with earthy turmeric notes and lamp oil. The palate is richly earthy. Full of barnyard funk, cow sheds, silage, ointments, lemon peel, sourdough, salted butter on warm bread, popcorn and waxed canvass. With water there’s hawthorn, chamomile, tea tree oil, chopped apricots, engine oils, wood resins, coal dust and mechanical lubricants.
