True to form, we found complex herbal notes (mainly tarragon) and sweet notes of runny honey with a chunk of honeycomb in it. There were also maritime memories, all wrapped up in a fatty, buttery texture. "A very pretty dram", said one panellist looking somewhat awestruck. To taste, as expected we found a waxy texture with a sweet biscuity note. Perhaps a pinch of salt on chocolate and some clovey spice in the finish. A splash of water brough scented candles to the nose, some clay in an artist's studio, strawberries shortbread and whipped cream on waffles. "Coats the teeth!" exclaimed another panellist. There were more herbal elements like arugula and geranium leaves, with a wonderful peppery spiciness at the end.
