The Panel noted a wealth of citrus notes to begin - grapefruit pith, crystallised citrus fruit peels and lemon barley water. Stem ginger in syrup, pineapple cordial, lemon cough drops, arrowroot, white pepper and herbal-scented waxes. Some lanolin and old polishing cloths. Reduction gave us canvas, baking parchment, toasted trail mix, dried apricot, mineral salts, beach sand and sea greens. The palate was brimming with herbal teas, exotic fruit chunks, fruity pavlova, limoncello, tarragon, miso and young dessert wines. Water brought a mustardy warmth, along with hessian, olive oil, petrichor and notes of beach wood, sweet waxes and mineral oil.
